Jarek Mika | Chef/Owner, Bistro Bohem

‘Back when he was a banker, Jarek Mika says, he would unwind from the stress of his job by cooking. “It was my escape,” says the Prague native, 34. He invited friends over to eat his meals, sometimes as many as six courses, until “I couldn’t find anyone to eat my food anymore.”

After almost three years of soul searching, including two semesters of culinary training at the Art Institute of Washington in Arlington, Mika made the logical leap and opened Bistro Bohem in March.’

– Tom Sietsema, Washington Post (May 16, 2012)

Rituals, traditions, policies, laws, best practices, how-to guides–every generation thinks they know it all. At every point in civilization, we try to instill or continue certain lessons and truths using vehicles such as education, science, governments, technology, religion, art, literature, music and media.

But how do we determine what to pass on, and how do we go about communicating it? Who chooses the message, who receives it, and at what point does the message become accepted? What happens when our understanding changes over time? Are there beliefs that are worth keeping around as “common sense,” and others we should consider letting go?

Tim Luym | Attic, Under Attic Bar, Urban Picnic, WoW Truck, Frozen Kuhsterd, Eastern Addition

San Francisco Chronicle three-star executive chef/owner Tim Luym brings cultural reflection to Asian cuisine. Luym, also a 2007 San Francisco Chronicle Rising Star Chef, adds a contemporary twist to timeless Asian dishes bred by street vendors, hawkers, and the native peoples without losing sight of the cultural identity. Luym’s passion for cooking led him to work with acclaimed chef Melissa Perello (Frances) at Charles Nob Hill and Fifth Floor. At the now shuttered Poleng, San Francisco Chronicle Top-10 new restaurant of 2006, Luym returned to his cultural roots. Using authentic Asian recipes and the freshest ingredients available in the Bay Area, Luym preserves cultural integrity in each dish. “Our food is not a fusion of cultural influences embodied thru food, but rather an exploration of Asian roots and reflection on culture, lifestyle and available natural resources.”

Now a restaurant consultant, consulting chef, and entrepreneur, Luym continues to elevate Filipino and Southeast Asian cuisine to new heights at Attic Restaurant and Under Attic Bar in San Mateo. Under Attic made it on 2012’s Top 100 Bars in the Bay Area by the San Francisco Chronicle. His other projects include Urban Picnic, an ethnic inspired soup, salad, and sandwich quick service establishment in the Financial District of San Francisco. Luym is also the principal behind the popular Filipino inspired WoW Truck and a partner in the Frozen Kuhsterd dessert company. Luym, an ex deejay, also is behind Eastern Addition, a community based project, working with unsung hero chefs and cooks of the Bay Area in hopes to elevate Asian food culture and jumpstart new and exciting popup projects.
